This festive, healthy holiday snack is easy and fun to assemble, and great for kids to make their own versions too!
Use plenty of celery cut into sticks for the tree, or consider broccoli or even green bell pepper. I used soft cream cheese as the ‘food glue’ base and to keep the ornament pieces in place, and heaped the rest of it on the bottom as snow (and a tasty dip).

I cut a lot of freehand stars out of cucumber and pepper before I got good ones for the tops of trees, but a star cookie cutter would have made that job a lot easier.
Veggie Christmas Tree
Select a base vegetable and your choice of veggies to create your colorful decorations!
1-2 stalks celery, washed and cut into small sticks, or
2 large heads of broccoli, cut and broken into small florets, or 3 bell peppers cut into strips
1 red or yellow bell pepper
green pimento-stuffed olive slices
black olives
cherry or grape tomatoes
cucumber
mushrooms
carrot curls
radish stars
1 tub of soft cream cheese
1 offset spatula
1 small star cookie cutter
1 large platter or container with a good lid
Wash and cut the veggies in advance. Select a large platter or a sealable container if you are transporting your tree to another location. Using an offset spatula, spread a 1/4 inch layer of cream cheese in the shape of your tree (or star, or wreath, or bell or angel – stick with the geometric outlines and use your imagination!).
Start by laying out the base vegetable, whether you are using celery, broccoli, or pepper. Press the veggies into the cream cheese base to keep them in place. Then start arranging your garlands and ornaments, trimming and checking for size and scale, then add a dab of cream cheese to the backs of the ornament pieces to help hold them in place.
When you are finished decorating the tree, spread the rest of the cream cheese along the bottom for a layer of snow.
