After a good rinse to remove any dirt, asparagus stems should be snapped.  Each stem will have a point at which it goes from being woody to tender, and a gentle bend of the stem will usually result in a quick ‘pop’ as it snaps at that exact place.  Sometimes it might be necessary to flex it a bit to find the breaking point, but each one will be just a bit different.  If you want the stalks to be even for presentation, snap each one and then line them up and trim the long ones, but don’t just cut the whole bunch in one go as this will leave behind some woody bits.  Once you get the feel for where the individual asparagus stems want to break, it will be a snap!
