What would be a good substitute for coriander seed? It is for a rustic baked pork pate’. I’m thinking a little lemon zest, due to the sour note? Ideas? – Kenneth, Minneapolis
You could use cumin seed, although it is a much louder flavor so use a bit less than you would with the coriander. Caraway is also a favorite of mine with pork dishes. There is a great medieval dish called Cormayre that combines coriander, caraway, garlic, red wine, black peppercorns and salt. Hands down my favorite combo for a pork loin. Rosemary also goes well in a mix like that.
